I need help to understand something. Why does PayPal take so blasted long to process echecks into my account. A customer pays with an echeck and it always without exception takes longer for those funds to show up than what they say. Are they holding onto the funds to the very last second to collect as much interest off of my money or what?? What is the answer???

From my understanding… what is happening is an ACH transfer – a standard bank account (theirs) to bank account (your PayPal acct) transfer that takes 2-3 business days. Paypal waits for their virtual check to clear before giving you the money.
As far as I know, if they are verified then they should be able to do instant payments. But those are not actually instant. Behind the scenes there is and ACH transfer taking place but PayPal trusts their account enough to give you the money outright.
