On my website we offer a variety of services to be done monthly. We want to let our customers choose what they want (with a checkbox) which every service would add a higher total… How do make it so that whatever they check, will be totaled and then the customer subscribes to that amount?

You could use a shopping cart software to do it for you. You would be selling services in this case.
For example, osCommerce works well with Paypal (see links below) and would do what you need.
