Say someone sends me money, I withdraw it with my bank account then remove my bank account from my paypal account.. then they dispute or w/e and take the money back.. will they take it out of my bank account even thought its not attached anymore?

Read the terms of service you agreed to at the time you opened the PayPal account. My gut feeling is that if your bank account is servered from your PayPal account, you authorization for them to access your account should also be voided. But a definitive answer to your question is bound to what you agreed at the time the accounts were opened plus any amendments to those terms of service since that time.
